The dishes don't really need an introduction but just to get your juices flowing here we go. Naan is a soft, rustic bread used to scoop up the chana masala which is a chickpea curry in a blend of authentic spices and flavours. I've had many requests to introduce Tarka daal onto the list of dishes we teach so here you go - tarka daal is a lentil soup topped with a hot tempering of whole spices served with a fluffy vegetable pilaf. And finally we have a samosa - how many times have you had a samosa at a restaurant or at an Indian friend's house and thought how do make that triangle, how do they make it so flaky, how do they make it so moreish - well wonder no more - all the secrets will be revealed herein.
